Delicious Eats: med-style chicken pita
D and I were at the grocery store this morning and were looking for a simple dinner for tonight, in addition to our meals for the rest of the week. D was struck by inspiration and this was our simple, quick, and delicious meal:
Med-Style chicken pitas
You will need:
– 1 store-bought rotisserie chicken (they were on sale at the store this week)
– Tzatziki sauce (we found some low-fat cucumber and dill veggie dip that is basically the same thing)
-Hummus (we made our own, see below)
Shred the chicken using 2 forks. Toast the pita (you can make this gyro-style (D’s preference), or cut in half and stuff the pita pocket– my preference, so clearly, the correct wat). Spread Tzatziki and the hummus on the pita, stuff with some shredded chicken, sprinkle in some quartered cherry tomatoes. Then, go stuff your face.
Our homemade hummus recipe is from Alton Brown (who D has a massive man-crush on). You can find it here. It is so easy, quick, and delicious. It’s way cheaper than buying it, and if you have a food processor, it takes about 5 minutes.
Things I might add for the future: some red onion, and maybe some feta cheese crumbles…
